Dropped Scone Recipe

Makes 12 scones
Ingredients Required
4 oz of flour (self-raising)
Quarter teaspoonful of salt
1/2 oz of margarine
2 ozs of sugar
One egg (beaten with 3 tablespoonfuls of milk)
6 drops of lemon essence.

Firstly mix the flour and the salt in a large bowl and then rub in the margarine. Next mix in the sugar and add a beaten egg and milk to make a smooth batter. Add the lemon flavoring at this stage. Bake 2 or three at a time by dropping a level tablespoonful for each scone onto a fairly hot and well greased girdle (a solid iron oven shelf or frying pan would do). Bake quickly over a gas ring or hot spot. When brown underneath turn and cook the other side.
Cool on a wire tray, serve with butter.
