Girdle Scone Recipe

Ingredients
1 lb self raising flour
Half a teaspoonful of salt
2 ozs lard
2 ozs sugar
One egg - beaten with half a pint of milk

Mix the flour and salt together and then rub in the lard. Mix in the sugar. Next mix in the egg and milk quickly with a wooden spoon until the flour is absorbed. Empty on to a well-floured board. Make into four round balls (do not knead as the less handling the dough gets, the better the scones). Roll out to 1/4 inch thickness and cut into flour. Bake on a moderately-hot girdle. When brown on one side, turn.
