Muffin Scone Recipe

Note: This is not a traditional scone, more of a muffin scone.
1 cup of oil (divided into thirds)
About 1 cup of milk
3 cups of flour
6 teaspoons of baking powder
Salt to taste
Half an egg (beaten)
Preheat your oven to 400 degrees (200 celsius).
In a one cup measuring cup break one egg. Add 1/3 cup of oil and add milk to the top of the cup. Do this three times, and whisk mixture together. In a seperate bowl, sift the flour, baking soda and salt. Make a well in the center of the dry ingredients and pour in the egg/oil/milk mixture. Stir until just mixed.
If you would like sweet scones add half a cup of sugar. If you would like cheese scones, add 2-3 cups of cheese and chopped chives/spring onions and sprinkle paprika on the top before baking.
Place on a greased baking sheet and bake in a pre-heated hot oven for 15-20 minutes.
