Grandma Provan's Famous Scottish Scones
Thanks to Ben Provan for submitting this recipe!
These scones are fun to make, as they are cooked on a skillet. Here is the recipe and instructions:
2C baking flour
1/2t salt
1/2t baking soda
1-1/4t cream of tartar
2t sugar
2T butter
1/2C dried currents
1C buttermilk
Heat a skillet or large pan to medium, let warm thoroughly.
Mix all dry ingredients thoroughly in a large mixing bowl. Cut in the 2 tablespoons of butter. Mix in the currents. Add the buttermilk, mix until the dough is moist. On a lightly floured surface, knead the dough a few times to further mix it, then roll out into a 1/2 inch-thick circle. Cut into eight wedges.
Transfer the scones to the skillet. Cook them until golden brown, then flip. Scones will rise slightly.
Serve with butter and orange bitter marmalade. Makes 8 scones.
